Disinfect pieces of equipment that come with, or have been used by, new stock; disinfect shoes and boots when leaving quarantine pens; buy only ree- ognized medicines and f e e d stuffs. In top of douhleo boiler, put semi-sweet chocolate, % eup sugar, salt, milk and Instant Coffee. Cook over hot water, stirring to blend. Beat egg yolks; add mocha mixture slowly, stirring rapidly. Return to double boiler; cook over hot water, stirring eonstantly until thickened. Remmke from heat; add gelatine; tir until dissolved. Chill until thick- ened. Beat egg whites until stiff; add remaining % eup sugar while continuing to beat. Fold in mocha mixture and hipped cream. Turn into pie shell; chill until firm. Garnish with wLipped cream if desired.
