At prom, every couple has a story and no two are exactly alike. Several intersecting stories unfold at one high school as the big dance ap- proaches; "Prom" portrays the precarious passage from high school to independence as some relationships unravel and others ignite. For Nova Prescott (Aimee Teegarden), it's a battle of wills as she finds herself drawn to the guy (Thomas McDonell) who gets in the way of her perfect prom. Fel- low seniors Mei (Yin Chang) and Tyler (De'Vaughn Nixon) harbor secrets, while others face all the insecurity and an- ticipation that surrounds one of high school's most seminal events. There are hundreds of nights in high school, but there's only one prom. This 103-minute dramedy is rated PG for mild language and a brief fight. But Po's new life of awe- someness is threatened by the emergence of a formida- ble villain, who plans to use a secret unstoppable weapon to conquer China and destroy kung fu. Food on the Table: Cucumbers G" Grilling Chef Heather Hunsaker foodonthetable.com Looking for a refreshing way to "cool off" this summer? Eat cucumbers! Cucumbers have extremely high water content that gives them a crisp, cool, refreshing taste. Originally from southern • Asia, cucumbers are a mem- ber of the gourd family, along with melons, squash and pumpkins. Although cucum- bers are available year- round, they are at their peak from May to September. Even though cucumbers are 90 percent water, they are an excellent source of vita- mins K and C, magnesium and potassium. They are low in sodium and one medium cucumber is only 40 calories. There are a wide variety of cucumbers, which vary in size, shape and color. Cucum- bers are grown to be either eaten fresh or to be pickled. Those to be eaten fresh are known as slicing cucumbers, or Persian cucumbers. They are long, crispy and thin and have a light to medium green color. Smaller sized cucum- bers, known as gherkins or American dills, are grown to make pickles. When selecting a cucumber to purchase, look for those that are firm, round at the edges and are medium to dark green. Generally, thinner cu- cumbers will have fewer seeds than their thicker counter- parts. Avoid any cucumbers that are yellow in color or are bruised and wrinkled. To keep cucumbers their freshest, they should be stored in the refrigerator, where they will stay fresh for several days. To freeze, cu- cumbers should be chopped and tossed in a small amount of vinegar and then frozen. If frozen properly, cucumbers will keep for three to four • months. Cucumbers can be enjoyed in a variety of ways. Add them to a salad, a cold re- freshing gazpacho soup or simply eat them with some salt and pepper. But next time try them in this Cool Cucumber Salad. Cool Cucumber Salad Prep time: 5 minutes Cook time: 10 minutes Wait time: 20 minutes Serves: 2 - 4 1 large cucumber, peeled and sliced 1/2 teaspoon salt Sauce: 1/3 cup apple cider vinegar 1/4 cup white wine 1-1/2 tablespoons sugar 1/4 teaspoon chili powder 1/3 cup red onion, mixed 1 garlic clove, minced Place cucumber slices in a bowl, sprinkle with salt and toss well. Let sit for 15 - 20 minutes. To make sauce: Combine vinegar, wine, sugar and chili powder, red onion and garlic in a small saucepan; bring to a boil. Reduce heat, cook until reduced to 1/3 cup (about 10 minutes). If proper safety measures are not fol- lowed, however, then that fun day of grilling can come to a quick end. Here are some important grilling safety tips to follow: --When using a grill be sure and place it on a flat sur- face, away from fences, plants, overhangs, deck rail- ings and buildings. Also, make sure to position the grill in a well-ventilated area. --Light charcoal carefully. Avoid pouring lighter fluid directly onto hot coals be- cause flames could travel up the stream of fluid and cause a fire. Also never use gaso- line to light a charcoal fire due to the risk of an explo- sion. --When putting out hot coals, place the cover on the grill and close vents. Allow the coals to burn out com- pletely, approximately 36 to 48 hours and then dispose of coals properly. --Kabobs are a fun and im- pressive way to serve food to your guests and also make it easier to cook smaller pieces of meat. If using metal skew- ers, be careful not to touch them directly off the grill, as the metal will be hot. When using bamboo or wooden skewers be sure to always soak them for at least 20 to 30 minutes before using them, thus preventing them from charring or burning while cooking with them. --Food safety is of utmost importance when grilling. Use a meat thermometer to ensure that meat is cooked to the proper temperature. Use clean plates, cutting boards and utensils when handling cooked food as opposed to raw. Try to store food at prop- er temperatures and discard any food after sitting out in the sun and in high tempera- tures for more than one hour. Honey Mustard Grilled Chicken Prep time: 5 minutes Cook time: 20 minutes Servings: 4 1/3 cup Dijon mustard 114 cup honey 2 tablespoons mayonnaise 1 teaspoon steak sauce 4 boneless skinless chicken breast halves Preheat the grill for medium heat. In a shallow bowl, mix the mustard, honey, mayonnaise and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat. Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserve.
