Commercial use of an old type
food cooker for processing cer-
tain fruit.s and vegetables may
be revived because of a new
method developed in a Univer-
sity of California College of Agri-
culture research project.
A modified Henze cooker, used
widely in Germany 40 to 50 years
ago to produce alcohol from pota-
toes, has been used successfully
to pre-heat, steam scald, crush,
extract juice, and flash pasteur-
ize fruit and vegetables in one
operation.

Conducting the research was
J. B. S. Braverman, director of
the Central Citrus Research Sta-
tion, Rohovot, Israel, who held
a temporary research appoint-
ment at the university for sev-
eral months.
The Henze cooker is a stain-
less steel conical pressure cylin-
der with a blow)ut valve at the
bottom.
In experimental tests, toma-
toes, citrus fruit and peels, apri-
cots, and pear cores and peels
were successfully processed for
use in making such things as
juice, pie fills, baby foods and
syrups.
Wash and Trim
A p p l led to tomatoes, the
method is as follows: After
washing and trimming, place
whole tomatoes into cooker; in:
troduce live steam, driving out
the air and preheating the prod-
uct; close the cooker and raise
steam pressure to about 45
pounds for two to three minutes;
shut the steam inlet and open
the blow-out valve quickly, dis-
charging the entire contents,
which tlecome completely disin-
tegrated when released into the
ordinary atmosphere.
The mash is screened to re-
move seeds and fragments.
Resultant juice has good color
and texture, although slightly
diluted with the steam conden-
sate in small scale pilot tests.
With a sufficient quantity of
fruit, dilution can be reduced
considerably.
Streamlined Version
of Chicken Almond
For a streamlined version of
Chinese chicken almond, saute
sliced onion and 1-inch pieces of
celery in butter. Then add diced
cooked chicken and mushrooms,
heat thoroughly. Stir in consom-
me with enough cornstarch to
thicken and soy sauce to season,
and cook only until thickened.
Add the roasted almonds and
serve over fluffy steamed rice
immediately.

Meat Loaf Crumbs
You can take a tip from the
Scandinavians about preparing
meat balls "and meat loaves.
They soak bread crumbs in milk
and then add them to the meat
mixture so the finished baked
product wilt be soft and delect-
able.

Pork Sausage Tempters Really Do Tempt
1 pound pork sausage meat 1 ounce red cinnamon
2 cups (No. 2 can) applesauce 2 drops red food coloring
- Form and roll sausage into %-inch balls. Brown in
over medium heat. Shake pan to brown evenly. Place a

dissolved. Place sausage bails in sauce, pick side up.
Yields 4 dozen.
Broiled Franks a Treat for the Gods
4 Franks (frankfurts) cheese.
4 4-inch thick sticks of sharp 4 slices bacon

%-inch thick stick of sharp cheese. Fasten cheese with

Flaky Beef Bites You'll Never Forget

1 5-ounce jar 01d York cheese *Use canned, boned

(¾ cup diced, cooked turkey)*
Whip cheese until creamy. Add turkey and mix
