Choose your grains Some people like rice, and some don't. I prefer a healthy mix of brown jasmine rice and purple-hued forbidden ride, so called because legend claims it was once eaten exclusively by the emperors of China. These can be added to the pot together in a 3-1 ratio with water and cooked according to directions. White rice is just as good, and it actually takes on a brighter purple hue from the addition of the forbidden rice. Noodles are another popular choice, and there are some great whole-wheat spaghetti noodles out there made without eggs or other additives. Cook these according to directions and dress with sesame oil for a great nutty flavor_that goes perfectly with almost any Asian-inspired meal. As a mom, and now a grandma, I always try to get as many vegetables into small children as possiMe. I like to add a rainbow of colors. So I chop up the red bell, a carrot, two green onions, two or more fresh garlic cloveSand three brown mushrooms. I also toss in a handful or two of frozen peas. Other additions can include cabbage, kale or another green leafy vegetable. Pour some olive or peanut oil into your pan and begin adding vegetables. Start with carrots affd peppers, giving them a head start on cooking time. Wait a minute and add the rest. Cook to desired texture, remembering that the closer they are to raw, the better they are for you. This de-lite-full rainbow medley is what's affectionately known as fake Chinese food around my house. Because Chinese New Year begins next week, we thought it would be fun to share the versatile recipe. Saucy marinade Juice and zest one large orange into a bowl big enough to marinate your chosen meat in, or big enough to stir up two or three cups of liquid in. A lemon works just as well, for a flavor twist• Add about 1/2 cup of dry sherry, 1/2 cup of soy sauce and.l/2 cup of cool broth-- your choice of chicken, beef or vegetable. You may omit the sherry and add extra broth if you, wish. If so, a small spoonful of sugar can enhance the citrus flavor• The finishing touch Remove your vegetabIes to the serving dish temporarily and add a little more oil to the pan. Using a slotted spoon, begin taking the meat Out of the marinade; pushing it against the spoon to remove more of the marinade from it before adding it to the hot pan. Too much • marinade creates hot splatters when the meat hits the pan. The small pieces.of chopped meat will cook very fast. When they're almost done, add the marinade to the pan and stir until it almost comes to abubble. Add the vegetables back into the.pan and let it come to a bubble this time, stirring gently, just so the cornstarch doesn't thicken in clots. Spoon purple rice around the sides of the serving dish, and then fill the ring of rice with the rest of the rainbow. You are now ready to sit down with forks or chopsticks a.nd enjoy an American-style Chinese food dish, a la Abuela Loca (Crazy Grandma), as I call myself these days. Maybe I will invent something new for Cinco de Mayo next who knows?
